Early Season Verjus

Vintage 2024

Our flagship product. Made like a traditional verjus, we press the grapes at veraison for maximum acidity.

The early season verjus is what we affectionately call our workhorse verjus. Equally versatile in the kitchen and the bar for various uses. Its elegance allows it to blend excellently with other ingredients.

Vintage Notes

Our 2024 vintage was pressed on August 21st, 2024. This vintage was made with a blend of Colorado Chambourcin, Pinot Noir, and Chardonnay from three unique vineyards. This verjus packs a lively acidity with notes of underripe red apple, finishes with white stone and white pepper.

Late Harvest Verjus

Vintage 2023

In our quest to ensure unripe grapes never go to waste, we have launched a unique style of verjus that we call "Late Harvest".  Should an early fall freeze hit, the vineyards must harvest the grapes, even if they aren't quite suitable for wine making.
This provides us with an opportunity to make a riper, fuller flavored verjus that maintains its classic acidity.

Vintage Notes

The 2023 vintage features abundant notes of Gala apples, white peach, hibiscus flowers with bright acidity and a white stone minerality. Its weight and riper flavors lends itself to unique uses.
Our 2023 vintage was made with Mourvèdre grapes and was pressed on October 27th, 2023.
